The product is to bebaked by increasing its temperature (Ti=20°C) to convection oven, through which the product is carried on a conveyor moving 0.130 m/s. The oven is L=3 m long and the convection heat transfer coefficient at the product surface and oven air temperature are h= 55 W/(m2 K) andT∞=300°C, respectively.
(a) Is the flake fully cooked after leaving the conveyer? Assume it needs to be greater than 210°C.
(b) Management wants to decrease the cereal to 2L=0.8mm to save money. What is the required speed for the conveyer to reach the temperature you got in part (a)?
