Vanilla extract, which is commonly used for baking, is produced by extracting vanillin from crushed vanilla beans using an alcohol solution. In one particular process 55.0 kg of crushed vanilla beans and 255 kg of a 35.0 wt% ethanol (E) in water (W) solution are added to a mixer. The vanilla beans have a vanillin (V) content of 2.0 wt%, and the remainder of the vanilla bean may be considered an inert solid (S). The contents are agitated at an elevated temperature for several hours, and then filtered to recover an ethanol in water solution containing most, but not all of the vanillin and none of the inert solids. The filter cake that remains after filtration contains all of the solids from the vanilla beans, a small amount of vanillin, and a small amount of entrained (trapped) water and ethanol.
